Zucchini Pasta

Zucchini, peas, jumbo lump crab meat, cherry tomatoes, chopped onions,
garlic, flour, white cooking wine & parsley

1. Shred zucchini into thin strips using a food processor or salad shooter.
2. Saute onions and chopped/pressed garlic in butter.
3. Add peas and crabmeat to skillet and heat for 5 minutes.
4. Add white wine and flour to form roux (sherry optional)
5. Stir in zucchini strips.
6. Add parsley and pepper to taste.


Sweet Potato Casserole

Sweet potatoes, sugar, milk, salt, eggs, vanilla, flour, 

brown sugar, butter, & pecans

1. Boil 2 lbs. potatoes in water until cooked; peel and mash potatoes.
2. Combine potatoes, 3/4 cup sugar, 1/4 cup milk, 1/2 teaspoon salt, 

2 eggs, 1/2 teaspoon vanilla extract, & 
3 tablespoons melted butter in a bowl.
3. Mix ingredients and pour into casserole dish.
4. Combine 1/3 cup flour, 2/3 cup brown sugar, 1/8 teaspoon salt, 

2 tablespoons melted butter, & 1/2 cup chopped pecans; 
sprinkle over potato mixture.
5. Bake at 350 degrees for 25 minutes.


Thai Peanut Shrimp Salad

Romaine lettuce, shrimp, ramen noodles, carrots, soy sauce, 

peanuts & thai peanut dressing

1. Pan fry shrimp in soy sauce, set aside.
2. Shave carrots into thin slivers.
3. Cook 2 packs ramen noodles in hot water (microwave or boiled).
4. Combine ingredients onto bed of lettuce. Add 2 tbsp. chopped peanuts
(Add cabbage, red onion, or avocado if desired)
5. Top with thai peanut dressing.


 Restaurant Style Beef & Broccoli

Egg noodles, steak, broccoli, onion, soy sauce, ginger & brown sugar

1. Soak 1 package egg noodles in warm water.
2. Slice about 1 lb. of steak into thin strips.
3. Mix 1/3 cup soy sauce, 2 Tbsp. brown sugar & 1 Tsp. ginger in bowl.
2. In large skillet or wok, heat 1 Tbsp. oil and add steak.
Add chopped onion, broccoli & noodles.
3. Stir-fry until ingredients are almost fully cooked and add soy sauce mixture.
4. Mix and heat for 5 minutes covered.


Maryland Style Salmon
Grilled salmon, crabmeat, mayonnaise & Old Bay

1. Grill salmon for 10 minutes on one side.
2. Flip salmon and spread mayonnaise on top.
3. Add crab meat and sprinkle with Old Bay.
4. Continue grilling until salmon is cooked throughout. 



Chicken Marsala

 
Chicken, mushrooms, marsala cooking wine, parsley & rosemary

1. Cut 4 chicken breasts into smaller pieces and dredge with flour.
2. Saute 1 cup mushrooms in skillet with butter and put aside.
3. Cook chicken in skillet throughout.
4. Add mushrooms back to pan with 1/4 cup water,
3/4 cup marsala cooking wine, 2 Tbsp. parsley & 1/4 tsp. rosemary.



Steak & Potato Salad

Steak, gold potatoes, onion, & mixed green lettuce

1. Pan fry or grill steak; chop into thin slices.
2. Boil potatoes, drain, and sprinkle with sea salt.
3. Sautee onion slices in pan with butter.
4. Combine salad ingredients in bowl.
5. Top with balsamic vinaigrette.
